If it looks like a duck and quacks like a duck, I’ve probably eaten it; for me the crispy, golden kissed skin of a well confit’d duck is like no other. I would go as far to say I’ve had many a love affair with the confit likes of barbary, muscovy and maybe even Daffy ( although he isn’t, in essence, a good bedfelow - he talks far too much).
